Plastic and Stainless Peg Mills

Sometimes known as a Stilton Mill, this equipment was traditionally used to reduce the curd size and ensure even distribution of salt. Chip mills differ from Peg Mills in that Chip Mills cut cheese with knives, whereas Peg Mills gently pull apart the cheese.
In effect, the Peg Mill produces a random curd chunk of varying size. When the cheese is pressed back together it creates a characteristic seamy look.
Applications: Stilton, Cheshire, Wensyldale, Cheddar, Crumbled Feta, Curds for retail.
Constructed with PVC and stainless materials for efficiency and optimum sanitation.
Mounts easily to the side of any standard cheese vat.
All-plastic pegs are completely removable to ensure proper cleaning.
Processes approximately 100# of curd in 5-7 minutes.
